Chocolate egg with strawberries

The strawberries are washed and wiped with a paper towel. Leave 6 strawberries whole and cut the rest into small cubes and put them in a bowl sprinkled with sugar. The amount of sugar can vary depending on how sweet the strawberries are.

Strawberry Foam Cake Ingredients:

  • 250 grams of strawberries (fresh or frozen)
  • 300 grams of sugar
  • 3 egg whites

Preparing Strawberry Foam Cake & # 8211 sheets

1. Turn on the oven and set it at 180 degrees Celsius.

2. The cold puff pastry (from the refrigerator) is divided into two identical pieces. On the work surface sprinkled with flour, two thin sheets of dough (2-3 mm.) Are spread in turn with the rolling pin, which is perforated with a fork, rolled on the rolling pin and with its help it is transferred to a tray lined with paper. baking (pictures 1 and 2 in the collage).

3. Cover the dough sheet with another sheet of baking paper and place a tray on top to press it so that it does not swell during baking. Bake the sheets one by one, for 20-23 minutes, in the preheated oven at 180 degrees.

4. Leave the baked sheets to cool, then overlap and level the edges with a sharp knife (left picture). One of the sheets is portioned into squares or, according to preference, can be completely crushed (for the top).

For the strawberry foam we will use the so-called & # 8222bezea italiana & # 8222, much more stable and in the end, and healthier, the egg whites being cooked, than the classic meringue: 250 grams of washed and cleaned strawberries are weighed in a saucepan. Crush with a fork, add 250 grams of sugar and lemon juice and put on the fire together. At first it will form an abundant pale pink foam, which must be removed, then let it boil at the right heat until the syrup reaches 117-118 degrees or, if you do not have a thermometer, until it binds as for jam and the surface is fills with large and lazy bulbs.

6. Meanwhile, beat the egg whites and add the remaining 50 grams of sugar. Attention, you have to synchronize yourself in such a way that when the meringue is ready, the strawberry syrup reaches the right temperature. While still beating with the mixer, pour the syrup thinly over the egg whites. You need a stand mixer or someone else's help. After all the syrup has been incorporated, the meringue will be hot, continue beating with the mixer, at high speed, until it cools down to room temperature. You will get a fragrant and very, very firm strawberry foam, perfect for filling the cake with strawberry foam.

Assembly

7. Place the foam on the whole sheet and level it as well as possible, straightening the edges. Cover with portioned puff pastry squares (or with crushed puff pastry) and dust with powdered sugar.
Strawberry shortcake is refrigerated for 2 hours before serving. Good appetite!

If you have 30 free minutes and a form of silicone that mimics eggshells, then stop thinking, the children will be super happy!

I think you can prepare chocolate eggs filled with cream even in well-washed and dried eggshells, but the waiting time should be a little longer, to make sure that we do not break the chocolate shell when we remove the eggshell by cracking / breaking.

I like to prepare special desserts for my child. After all, he is the center of attention in every family. It is our universe.

And, if he is as good a child as I was lucky to have, I really feel like doing all his cravings.   • 250 g oats

Stir gently to cool, then put a blender in the middle and start mixing. Only add a little more liquid if necessary.

How do we prepare the chocolate croissant recipe?

It is very simple to prepare these croissants. To start, we prepare the mayonnaise, dissolve in a glass the yeast with a little warm milk, a spoonful of sugar and a spoonful of flour.

Stir and set everything aside for about 15 minutes to activate the yeast.

Put the flour in a bowl, make a crater in the middle where we will put the mayonnaise, the rest of the sugar, eggs, milk, vanilla and mix a little.

Add salt and start kneading. After everything is incorporated, add the butter.

Knead for about 10 minutes until you get a homogeneous dough that does not stick to the hands that we will leave to rise for about an hour (until it doubles in volume).

Chocolate truffles

Melt the chocolate in a bain-marie or in the microwave. Boil whipped cream with honey and cinnamon. Pour this mixture over the melted chocolate and mix gently, from the center to the edge, moving the bowl. When the ganache reaches 24 degrees Celsius, add the butter that is already at room temperature and blend with a hand blender. Leave in the fridge for at least 4 hours.

When the mixture has cooled, we form 15 g balls that we give through tempered chocolate (32 degrees Celsoius) and cocoa.

Ganache batut

Melt the dark chocolate (in a bain-marie or in the microwave). Boil the 0.110 kg of whipped cream, pour them in two tranches over the melted chocolate. Mix with a spatula, blend and add the other whipped cream, cold. Mix again with a spatula, put a plastic wrap over the bowl and refrigerate for at least 8 hours. It is best to prepare this ganache the day before. After 8 hours, or overnight, beat the ganache in the mixer. You will get a fine, aerated cream.

Fitting

Take the tart out of the fridge. We cut and place the strawberries that we cover with the hot apricot skin (so that they shine and stay fresh longer). If it is eaten immediately, we no longer need the pellet…
We put the beaten ganache, we put the truffles and some chocolate decorations.

From what remains I start to do either strawberry mousse (recipe here), either a small portion of creamy strawberry ice cream and flour.

I make strawberry ice cream based on a vanilla ice cream recipe with yolks, sugar and whipped cream. I wrote it down in the & # 821780 years of a Swiss magazine and have done it dozens of times since. It comes out creamy and fine, without ice needles. Ice is formed from water and if the composition does not have such a thing it will not form ice needles. That's why I don't put milk in ice cream, just natural whipped cream made from sweet cream and, sometimes, Greek yogurt which is very creamy.
