We soak the beans in the evening. The next day we boil it, letting it boil for a while, then drain the water and replace it with another hot water. Repeat this operation 2-3 times and let it boil in the last water, until the bean is very well boiled.
Drain the beans from the water, then put it in the robot, or pass it through a sieve. Put a few tablespoons of olive or sunflower oil over the mashed beans and rub it well. Then add the crushed garlic, season with salt and pepper to taste.
Separately, prepare the frying: Cut the onion into small pieces or julienne, put it in a 2-3 tablespoons of oil, then add the vegetable stew or the homemade broth, fill with a little water and leave until the onion softens. Season with salt, pepper and paprika. We put the beans in bowls, and we will fry them over.
